It might be a cold day in May but my stomach knows it’s supposed to be summer (hence the steak and watermelon!)
I’ve always been the kid who makes their gifts for Mother’s Day. No point in breaking tradition….even if I am 26!
Somewhere down the road I will create a healthy alternative to this treat but I don’t like strawberries so, what’s the rush? I’m 99% sure I just heard a collective gasp from my followers. I know, I’m probably alone in my hatred for these pretty berries.
Moving on! I rinsed the berries, cut off the greens, and hollowed them out a bit. Using pre-made cheesecake filling, I spooned the mix into a baggy, snipped the corner, and filled each strawberry. Put it in the fridge for about 20 minutes so it can set up. Melt chocolate and fill/snip another baggy to drizzle on top.
I found square bakery boxes and mini cupcake liners to package and deliver to the moms in my life. Simple! And it was a huge hit!
Don’t bother telling me that fruit and my beloved Clif Bars have too much sugar. Just don’t.

When I workout with my friend Mariah, I tend to shout out “I hate you Jillian Michaels!!” because she is ruthless and motivating all at the same time. So I’ve taken to creating memes especially for her. This is in reference to her Iron Man viewing.
Wraps for dinner: flatout flatbread, cracked pepper turkey, creamy dill Havarti, pickle slices and romaine. And don’t forget the sugar-free peach tea in my Batman mug ;)
Oh my goodness, I’m in Heaven! Bob Evan’s seasonal chicken salad plate. Fruit coma, here I come! And this is why I love summer :)
